Vineyard and orography: grapes from plots that are more than 60 years old, located in the upper area of Villabuena de Álava at an altitude of 530 meters above sea level. The vineyards are sheltered from the cold northerly winds and oriented to the midday sun, so that the maturation of the grape occurs in the most optimal way possible. Clay-calcareous soils.
Density of planting: 2500 strains per hectare. Goblet pruning. Production: 3200 kg/ha. Manual harvesting.
Elaboration: Selection made on the vine, with only the best grapes arriving at the winery. Slightly destemmed to avoid damage to the grain. Pre-fermentation cold maceration. Alcoholic fermentation in a small capacity tank for 18 days at a maximum temperature of 29ºC. Pump-overs and punch-downs according to the fermentation stage. It will not undergo any stabilization or filtration processes. Date of bottling: January 2, 2016.
Tasting notes:
It is a cherry red wine with violet hues.
Closed. Complex and very serious. Aromas of ripe black fruit appear following “breathing”.
On the palate, it is broad and powerful, fleshy; well balanced taste, with fruity sensations.
Fleshy, inviting, with fine tannins. Very long, expressive aftertaste, leaving behind clearly marked traces of the character of the land, rounded and balanced.
Analysis: Alcohol 14.7% Total Acidity 4.1 gr/l PH 3.91 Volatile acidity 0.56 gr/l.
